so we wanted to write blog posts that contain stats regarding Discourse and how much Mozillians like it. What sort of stats should we cover?

Not just discourse, any sort of stats we can put out. Number of communities hosted, downtime/uptimeā¦ response time. Something that will be easy to put together for a regular update.
For Discourse we could have number of active users in x period, number of new threads in period, number of new posts, we could announce any new categoriesā¦
